The appetizer is crusted scallops: dipped in herbs, mango and a hint of pica papaya, the scallops are served with a sweet pea puree, dried mango. A foam of Prosecco Brut and lime zest make this appetizer a super festive start of your dinner.
There are three special entrees to choose from: the first is cherry wood smoked salmon with sautéed green beans, spinach, Belgian endives and treviso lettuce, served with a yogurt of capers and lumpfish caviar. Then there is stuffed calamari with shrimp and octopus, served with sautéed bok choy, scallions, beech mushrooms, black sesame seeds, rice noodles and an eel sauce. And your third option is marinated rack of lamb with Dijon mustard, and herbs, served with mashed roasted red beets, grilled baby carrots and Brussels sprouts with a red wine mint reduction glaze and a crispy daikon.
The wines that have been chosen to enhance and enrich your meal are a Robert Mondavi Chardonnay from California; its juicy peach and grilled pineapple taste is counteracted by toasty oak. The Ménage à Trois Cabernet Sauvignon from California is luxurious, rich and seductive – it seems that this fantastic wine will make Casanova himself blush.
